On a recent last minute jaunt to Providence for Waterfire, I found myself at a quaint restaurant that specialized in local, organic, sustainable produce, fish and meats, as well as locally-made beer and wines. While the food was marvelous, I found myself engrossed in every aspect of the meal thinking, ‘where is this quinoa from?’ I also thought, why am I not employing these tactics at home?
